Thyme-Crusted Fish

I only made the crust part of this recipe at the link, but I also made some adjustments.

Ingredients
- 4 fillets of a thick, flaky fish such as halibut, rockfish, or cod
- Salt
- Lemon pepper
- Olive oil
- 1 cup panko bread crumbs
- 1/4 cup chopped parsley
- 1 TB fresh chopped thyme
- 4 TB melted butter

Preparation
Step 1
Preheat oven to 350. Season fish with salt & lemon pepper. Drizzle both sides with olive oil. In a shallow dish, combine panko, parsley, thyme, & butter. Lightly dredge both sides of fish in bread crumb mixture. Place on a baking sheet. Top each fillet with remaining bread crumb mixture, gently patting into the fish. Bake for 25 to 30 minutes.
