Savory Yellow Split Pea & Turkey Soup

Numerous varieties of cooked smoked turkey are available in supermarket delis. You may also want to check the selection of turkey sausage at the meat counter.
Ingredients
- 2 cups dry yellow split peas (1 pound)
- 2 cups chopped cooked smoked turkey or slice cooked turkey sausage
- 1 1/2 cups corsley shredded carrots
- 1/2 cup chopped chives
- 1 clove garlic, minced
- 1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed
- 1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed
- 5 cups chicken broth
- 2 cups water
- 1/2 cup snipped dried tomatoes (not oil-packed)

Step 1
1) Rinse split peas; drain.
2) In a 3 1/2 to 4 qt. slow cooker combine the split peas, turkey or turkey sausage, carrots, chives, garlic, dried basil, and oregano (if using). Pour chicken broth and water over all.
3) Cover; cook on low-heat setting for 6 to 8 hours or on high-hear setting for 3 to 4 hours. Stir in dried tomatoes; cover and let stand for 10 minutes. If using, stir in fresh basil and oregano.
