Zesty Marinated Grilled Chicken Breasts

Ingredients
- 1/2 cup vegetable oil
- 1/4 cup lemon juice
- 2 chicken bouillon cubes
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley
- 1 clove garlic, minced
- 1 lemon, grated rind only
- 1/4 teaspoon black pepper
- 4 boneless skinless chicken breasts

Preparation
Step 1
In a shallow non-metallic dish large enough to hold chicken in a single layer, whisk together oil, lemon juice, chicken bouillon, mustard, parsley, garlic, lemon rind, and pepper until well combined.
Add chicken breasts, turning to coat with marinade. Refrigerate, covered, at least 2 hours or overnight, turning chicken occasionally.
Remove chicken from marinade; place on oiled barbecue grill. Grill over medium-high heat (or broil 4 inches from broiler) for 8 to 10 minutes, spooning over some of the marinade halfway through cooking time and turning once, until golden brown and no longer pink inside
