Ingredients
- Enough pastry for a 9 in. 2 crust pie
- 4 tbs. butter or margarine
- 1 medium onion, chopped
- 2 tbs. plain flour
- 1 c. cream or milk
- 1 tbs. brandy or sherry
- 1 lb. mushrooms, chooped
- s&p

Step 1
Preheat oven to 400 deg. Line a greased pie dish with hlf the pastry so it overhangs the edges by about 1/2 in. Melt butter in saucepan & saute onio until tender. Sprinkle the flour over the onion & stir well as it thickens. Kepp pan over low heat & gradually stir in cream, stirring constantly to create a thick, smooth sauce. Add brandy, s&p & mix well, still over low heat. Stir in mushrooms & cook for about 2 min. Remove from heat & pour into prepared pie dish. Roll out other half of pastry & cut into strips & weave to make lattice top or just use regular crust with long cuts to release steam. Crimp edges & bake for 25-30 min. until golden brown.
