Ingredients

  • 2 cups oatmeal
  • 1 cup flour
  • 1 cup wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup splenda
  • 3 tsp. baking powder
  • 3/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 1/2 cup buttermilk
  • 2 eggs, slightly beatein
  • 1/2 cup vegetable oil
  • 2 1/2 tsp. almond extract
  • 2 cup forzen or canned drained tart
  • cherries, coarsely chopped in a
  • food processor
  • Also - extra oatmeal

Preparation

Step 1

In a large bowl combine oatmeal, flour, brown sugar, baking powder, nutmeg and salt. In a separate bowl combine the buttermilk, eggs, oil and extract. Pour buttermilk mixture into oatmeal mixture and stir. Stir in cherries and let the batter sit for 10 minutes. Fill greased muffin cups almost full. Sprinkle additional oatmeal on top of the batter.

Bake in a preheated oven at 375 degrees for 20 - 25 minutes oruntil the tops are lightly brown.
