Ingredients

  • 8 cups sliced yellow squash
  • 2 cups sliced onions
  • 1 tablespoon salt
  • 1/2 cups diced bell pepper
  • 1 cup cider vinegar
  • 1 3/4 cup sugar
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon mustard seed

Preparation

Step 1

Combine squash and onions. Sprinkle with salt. Let stand for 1 hour.

Combine all other ingredients in a sauce pan and bring to a boil. Take from heat.

Add squash & onions to mixture.

Pack in hot, sterilized jars. Cover with vinegar.

Seal.
