Ingredients

  • 1 medium eggplant
  • 1 teaspoon salt
  • 2 tablespoons green pepper - chopped
  • 1 egg beaten
  • 3/4 cups breadcrumbs
  • 1 cup cream style corn (optional)
  • 1/2 teaspoon black pepper
  • 1/2 cup cheese - shredded

Preparation

Step 1

Cook eggplant until tender. Drain & mash.

Add al ingredients - Except cheese. Mix well

Place in a 1 1/2 quart baking dish. Sprinkle cheese on top.

Bake at 350 for 30 minutes.
