Ingredients
- 1 medium eggplant
- 1 teaspoon salt
- 2 tablespoons green pepper - chopped
- 1 egg beaten
- 3/4 cups breadcrumbs
- 1 cup cream style corn (optional)
- 1/2 teaspoon black pepper
- 1/2 cup cheese - shredded
Details
Servings 6
Preparation
Step 1
Cook eggplant until tender. Drain & mash.
Add al ingredients - Except cheese. Mix well
Place in a 1 1/2 quart baking dish. Sprinkle cheese on top.
Bake at 350 for 30 minutes.
