Cajun Andouille Shrimp Skillet

Ingredients
- 2 links andouille sausage; diced
- 1 shallot; minced
- 1/3 cup white wine
- 1 pound shrimp; peeled, deveined
- 1 28 ounce can petite diced tomatoes
- 1 teaspoon paprika

Preparation
Step 1
Heat a nonstick skillet over medium high heat for two minutes. Add diced
sausage and cook until fat has rendered and pieces are crispy. Reduce heat
to medium and add shallot; cook until translucent, about two minutes.
Remove pan from heat and add wine, scraping any browned bits from the
bottom of the pan. Add tomatoes and paprika and bring to a simmer. Add
shrimp and simmer until shrimp are pink and cooked through, three to five
minutes. Serve over rice.
