  • 9 oz peeled raw shrimp (20 med)
  • 1 jalapeno, finely chopped
  • 1 piece ginger, finely chopped
  • 4 garlic cloves-chopped
  • 1 tbsp chopped cilantro
  • 1 tsp salt
  • 1 egg
  • arugula
  • Sweet Chili Sauce:
  • 1 chopped onion
  • 2 finely chopped garlic cloves
  • 2 finely chopped hot red peppers
  • Juice of 2 oranges, divided
  • 1 tbsp honey
  • 1 tbsp malt vinegar
  • 2 tbsp ketchup

Place bread in bowl, cover with water, let soak 10 sec, squeeze out excess, place in food processor w/ rest of ing, pulse until blended. preheat oven to 400, using lightly floured hands, divide mix into 12 cakes. Spray oil on baking sheet, space cakes out evenly, spray with oil, bake 15-20 min, turning over halfway through. Serve with arugula and sweet chili sauce...

In sm pan, combine onion, garlic, hot peppers and juice of 1 orange, bring to boil, simmer 4-5 min until oj is nearly absorbed, stir in juice of another orange, honey, vinegar and ketcup, bring back to boil, simmer gently 2-3 min until thick....
