Ingredients

  • NONSTICK SPRAY COATING
  • 1 egg
  • 1 egg white
  • 1 cup soft whole wheat bread crumbs
  • (about 1 1/3 slices bread)
  • 1/2 cup finely chopped green onions
  • 1 2-ounce jar diced pimiento, drained
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon milk or water
  • 1/4 teaspoon pepper
  • 1 1/2 pounds ground raw turkey
  • 2 tablespoons apricot preserves
  • 1/4 teaspoon ground ginger
  • fresh tomato wedges (optional)
  • fresh sage (optional)

Step 1

Spray a 9x5x3-inch loaf pan with nonstick coating. Set aside.

In a large bowl combine the egg, egg white, bread crumbs, green onions, pimento, soy sauce, milk or water, and pepper. Add the ground turkey, mix well. Press mixture into prepared pan, patting to smooth the top. Bake, uncovered, in a 350 degree oven for 45 minutes.

Meanwhile, in a small bowl stir together the apricot preserves and ginger; brush over the surface of loaf. Bake 10 to 15 minutes more or until no longer pink. Remove from oven; pour off any drippings. Let stand for 5 minutes; invert onto a plate. Turn right side up for slicing. If desired, garnish with tomato wedges and fresh sage.
