Ingredients
- 4 lb pork tenderloin
- 1 T oregano
- 1 T basil
- 2 T minced red onion
- 1 T minced garlic
- 1 t marjoram leaves
- 1 t rosemary leaves
- 1/2 c balsamic vinegar
- 2 c dry red wine
- 1/4 c EVOO
- 1 t Coarse ground pepper
- 1 t Sea salt

Preparation
Step 1
Slice pork tenderloin into 1/2 in slices, trim fat & cut each slice in the center to make medallions. Put medallions into skillet with oil. Season with pepper & salt. Brown both sides. Remove & place in 9x13 casserole dish.
In bowl mix remaining ingredients. Pour over medallions. Cover with foil. Bake at 375 for 2 hrs. Remove foil & bake for 15 more min.
