Vegetable Beef Kabobs

Ingredients

  • 1 1/2 lbs beef sirloin steak
  • 2/3 c white wine or beef broth
  • 1/3 c soy sauce
  • 2 T vegetable oil
  • 1 t minced fresh ginger root or 1/4 t ground ginger
  • 1 garlic clove, minced
  • 1/2 t dried tarragon
  • 18 sm whole onions
  • 3-4 sm zucchini, cut in 1 in slices
  • 2 lg sweet red peppers, cut into 1 in slices

Step 1

Cut beef into 1 1/4 in cubes; place in lg resealable plastic bag. In 1 c measuring cup combine wine, soy sauce, oil, ginger, galic & tarragon; pour 2/3 c marinade over beef. Seal bag; let stand at room temperature for 45 min. Set aside remaining marinade for basting.

Drain & discard marinade from beef. Thread meat, onions, zucchini & peppers alternatively on 6 metal or soaked wooden skewers. Grill over med hot heat 10-12 min until meat reaches desired doneness, turning & basting occasionally with reserved marinade.
