Ingredients
- 1/3 cup butter, soft
- 1/3 cup sugar
- 1 egg
- 1 1/2 cups milk
- 1 cup flour
- 1/2 teaspoon salt
- 4 teaspoons baking powder
- 1 cup corn meal

Preparation
Step 1
Cream shortening and sugar; add egg and milk. Add flour sifted with salt and baking powder. Add corn meal, stirring only enough to mix. Fill greased muffin pans 2/3 full; bake in hot oven (425F) 20-25 minutes.
