Ingredients

  • Enough for 10-15 hearty men
  • (24) 8" Low fat sausage without preservatives - from the Beckwith Butcher in Carleton Place
  • 1-2 medium size Red and green sweet peppers
  • 1 large (chopped) Red onion
  • 1 bunch of green onions
  • 1 leek coarsely chopped
  • 1 cup of White and brown mushrooms
  • 1 cup of Dried prunes and apricots
  • 1 cup of pure organic juice (I prefer dark red cherry)
  • 4-6 cloves garlic (chopped)
  • Grind to fine - peppercorns, fennel seed, cumin seeds, anise, cilantro, turmeric
  • Red chilies - 1 small (chopped fine)
  • Water - 3/4 cup
  • Olive Oil - 1 tbsp
  • Peppercorns - 1 tablespoon
  • Fennel seed - 1 tsp
  • Anise seedbed- 1 tsp
  • Coriander seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Ground turmeric - 1 pinch
  • Cilantro - 2 tbsp (chopped)
  • Optional: ripe tomatoes, fresh green beans, and 1 tsp of ground cloves

Preparation

Step 1

Brown the sausages, let cool then cut into thirds. Load all ingredients into a suitable slow cooker. Cook on high for 1-2 hours. Cook 8-12 hours on low
