Ingredients
- 1 Large Onion, sliced into rings
- 1/2 Cup Butter
- 2 Tbs. Flour
- 1 lb. Fresh Mushrooms, sliced
- 8 Cups Beef Stock
- 1 Tbs. Worcestershire Sauce
- Salt and Pepper to taste
- 1/4 Cup Sherry

Step 1
Saute onions in 1/4 cup butter. Blend in flour. Saute mushrooms in 1/2 cup butter. Add mushrooms, beef stock, seasonings and sherry to onion mixture. Simmer about 15 minutes. Optional: place a slice of sourdough bread into bottom of a soup crock. Ladle soup on top of bread. Place a thick slice of mozzarella cheese on top. Place crock in 350 degree oven until cheese melts.
