Ingredients
- 1/2 cup egg substitute
- 1/3 cup skim milk
- 1/4 cup applesauce
- 2 TB canola oil
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2/3 cup sugar
- 2 very ripe bananas, mashed (about 1 cup)
- 1 tsp vanilla

Step 1
Heat oven to 350 degrees. Spray 9x5 inch or 8x4 inch loaf pan with nonstick cooking spray; dust with flour. In a small bowl stir together egg substitute, milk, applesauce and oil; set aside.
In another small bowl stir together the flours, baking soda and salt; set aside.
In a large bowl beat together sugar, mashed bananas and vanilla with electric mixer. Alternately add egg mixture and flour mixture, beating on low speed and scraping bowl often until all ingredients are incorporated. Pour into prepared loaf pan. Bake 35 - 40 minutes or until toothpick inserted in center comes out clean. Cool completely before slicing.
