Ingredients

  • 1 tsp canola oil
  • 1 onion, chopped fine
  • 2 garlic cloves, minced
  • 2 tsp minced fresh thyme
  • 1 1/2 slices hearty white sandwich bread (crusts removed, torn into 1" pieces)
  • 1/2 cup whole milk
  • 2 large eggs, lightly beaten
  • 1/4 cup minced fresh parsley
  • 2 tsp dijon mustard
  • 2 tsp worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp hot sauce
  • 2 pounds 93 percent lean ground turkey
  • 1/2 cup ketchup
  • 2 tbsp packed light brown sugar
  • 4 tsp cider vinegar

Step 1

1. Heat oil in 10" nonstick skillet over medium-high heat until shimmering. Add onion and cook until softened and lightly browned., 5 to 7 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds: transfer to bowl to cool.

3. mash bread and milk together into smooth paste in large bowl using fork. Stir in cooled onion mixture, eggs, parsley, mustard, worcestershire, salt, pepper, and hot sauce until combined. Mix in ground turkey using hands until uniform.

4. Press mixture into loaf pan.

5. Stir ketchup, sugar, and vinegar together in bowl, then brush half of mixture evenly over meatloaf. Bake for 45 minutes.

6. Brush meatloaf with remaining ketchup mixture and continue to bake until loaf registers 160 degrees, 15 to 20 minutes longer. Let rest for 20 minutes, then slice into 1 1/4" thick pieces and serve.
