Ingredients

  • 3 T olive oil + more for brushing
  • 1 T red wine vinegar
  • 1 t Dijon mustard
  • 2 6oz. cans tuna
  • 9 oz. artichoke hearts, coarsely chopped
  • 1/2 C pitted green olive, coarsely chopped
  • 1/2 C thinly sliced red onion
  • 1 1/2 T shredded basil
  • salt & pepper
  • 4 Ciabatta rolls, split
  • 1 clove garlic
  • 1/2 lb. Robiola or Brie cheese, sliced

Preparation

Step 1

Preheat broiler. In med. bowl, whisk 3 t oil with vinegar & dijon til combined. Add flaked tuna, chopped artichokes, chopped olives, sliced red onion & shredded basil. Toss gently. Season with salt & pepper
Using pastry brush, brush cut sodes ciabatta rolls lightly with olive oil & broil, cut side up 2 min. Rub garlic clover over toasted ciabatta & mound tuna salad on top. Cover with sliced cheese & broil til cheese is just melted, @ 1 min. Serve at once.
