Ingredients

  • MARINADE SAUCE:
  • 4-6 salmon fillets,cubed
  • 1/2 cup flavored bread crumbs
  • 1/2 cup cornflake crumbs
  • 4 tbsp. mustard
  • 4 tbsp. honey
  • 1/3 cup olive oil
  • 2 tbsp. fresh lemon juice
  • Grilled Vegetables:
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 red onion
  • 15 fresh mushrooms
  • oil, to sprinkle
  • salt and pepper, to sprinkle

Step 1

1. Mix together mustard,honey,olive oil and lemon juice, reserve half for sauce.
2. Marinate fish in the remainder of the marinade in a bag for a minimum of thirty minutes.
3. Preheat oven to 375 degrees. Combine crumbs in a shallow dish;coat fish. Bake for 20-25 minutes uncovered.
4. Slice peppers and onion. Place all vegetables onto a greased cookie sheet. Toss to mix. Broil for 15 minutes.
5. Place fish over vegetables and drizzle both with reserved marinade.
