Ingredients

  • 1 c chopped pecans
  • 1 1/2 c softened butter
  • 8 oz. cream cheese, softened
  • 3 c sugar
  • 6 large eggs
  • 3 c flour
  • 1/2 t salt
  • 1/4 c bourbon
  • 1/2 c sweetened shredded coconut
  • 1 1/2 t vanilla
  • Decorate cake with glaze,rosemary,cranberries

Step 1

Preheat oven to 350 deg. Bake pecans in a single layer 5-7 mins. Cool completely on wire rack (15 mins). Reduce oven to 325 deg. Beat butter & cream cheese until creamy. Gradually add sugar until light & fluffy. Add eggs, 1 at a time, beating until yellow just disappears. Sift flour & salt; add to butter mix with bourbon. Stir in coconut, vanilla & pecans. Pour into greased & floured tube pan. Bake 1 1/2 hrs. Cool 10-15 in pan, then 1 hr.
