This can be assembled the night before in the crock pot's liner, refrigerated and then inserted into the cooking container and "plugged in" the next morning.
Serve with corn bread or a good bread.

Ingredients

  • 2 pounds loin pork roast
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon Tabasco sauce -- or to taste
  • 3 cloves garlic -- pressed
  • 3 teaspoons salt
  • 3 cups dried pinto beans
  • 1 medium yellow onion -- chopped
  • 1 can Rotel tomatoes

Preparation

Step 1

Combine all ingredients in a large crock pot liner. Add enough water to come within a half-inch of top.
Cook on LOW until beans are tender, approximately 8 hours.
Serve with any or all of these toppings: sour cream, chopped onion, grated jack or cheddar cheese, avocado slices, pica de gallo,
chopped jalapeno peppers, fried tortilla chips.
