- 2 lb.s fresh sliced peaches
- 1 oz. lemon juice
- 4 oz. sugar
- 8 egg yolks
- 2 pints heavy cream

8 egg yolks
2 pints heavy cream
Combine peach slices with lemon juice in a bowl; cover and set aside. Combine egg yolks
and sugar, whipping until thick and light-colored. Then in a saucepan over medium-low
heat, scald the cream. Remove from heat and gradually beat in the egg mixture. Heat this
mixture over a hot water bath, stirring constantly until it thickens enough to coat the back of
a spoon. Remove and chill mixture for one hour in the refrigerator. Mix peaches into chilled
custard and freeze in an ice cream maker, according to directions.
