Stuffed Mushrooms With Pepperoni
- 12 large mushrooms
- 2 tablespoons margarine
- 1/2 cup chopped onion
- 1/2 cup diced pepperoni
- 1/4 cup chopped green pepper
- 1 garlic clove minced
- 1/2 cup cracker crumbs
- 3 tablespoons parmesan cheese
- 1 teaspoon dry parsley
- 1/2 teaspoon salt
- 1/4 teaspoon oregano
- 1 dash freshly-ground black pepper
- Chicken broth enough to just
Wash mushrooms. Remove stems and chop.
Melt margarine and add chopped stems and next four ingredients. Cook until tender. Add remaining ingredients and mix well. Add enough of the chicken broth to moisten.
Stuff caps and place in shallow baking dish with enough water to cover bottom. Bake at 325 degrees for 25 minutes.
