Molasses and Coffee Pork Chops

Ingredients
- 1 cup strong brewed coffee, cooled
- 6 oz molasses, by weight - about 1/2 cup
- 2 tbsp cider vinegar
- 1 tbsp dijon mustard
- 2 cloves garlic, minced
- Salt and Pepper
- 1/2 tsp ground ginger
- 6-8 sprigs fresh thyme
- 4 6-8oz bone in pork chops

Preparation
Step 1
Combine the coffee, molasses, vinegar, mustard, garlic, 1 tsp salt, 1/2 tsp pepper, ginger, thyme, and pork chops in a 1 gal zip-top bag. Marinate in the refrigerator at least 2 hours to overnight.
Preheat grill to medium high. Remove the pork from the bag. Place the marinade into a saucepan and boil gently over meduim heat until reduced to 1/2 cup, 12-15 minutes. Remove the thyme stems.
Grill the pork chops until done. Serve with the glaze.
