Bacon Cheeseburger Pie

Ingredients
- 1 prepared pie crust
- 8-12 slices bacon, chopped
- 1 lb lean ground beef
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 cup diced canned tomatoes
- 1 packet Mrs Dash extra spicy (optional)
- salt and pepper to taste
- 1 cup shredded Co-Jack cheese, divided
- 1 egg, beaten
- sour cream (optional

Preparation
Step 1
Preheat oven to 375°. Prebake crust 10 minutes, or til slightly browned.
In a large frying pan or skillet on medium high heat, brown bacon well. Remove and drain. Add beef and onions to the same pan, cooking til beef is browned. Stir in garlic and cook another minute or so. Add tomatoes and seasoning; cover and simmer about 15 minutes. Stir in bacon, half of cheese and salt and pepper. Check for seasoning and adjust as needed.
Cool slightly and stir in egg.
Pour beef mixture into prepared crust.
Bake 30 minutes or til pie is hot and bubbling. Remove and top with remaining cheese; return to oven til cheese is melted.
