Chicken Breasts with Savory Mustard Herb Sauce

Ingredients

  • 2 T oil
  • 1 lb boneless chicken breasts
  • 1 med zucchini
  • 1 1/2 c mushrooms
  • 1 envelope Lipton Herb with Garlic or Golden Onion Soup Mix
  • 3/4 c water
  • 2 t Dijon-style or brown mustard

Preparation

Step 1

In 12-in skillet, heat 1 T oil over med-hi heat and cook chicken 5 min or til almost done, turning once. Remove and keep warm. In same skillet, heat remaining oil and cook zucchini and mushrooms. Stir frequently about 3 min. Return chicken to skillet, stir in soup mix already blended with water and mustard. Bring to boil over hi heat. Reduce to low and simmer covered 5 min or til chicken is done. Serve over rice and sop with sauce mix.
