Mushroom 'Risotto' With Feta

Ingredients

  • 2 tablespoons olive oil
  • 1 pound crimini mushrooms sliced
  • 1 1/4 cups orzo pasta - (8 oz)
  • 1 can Italian style stewed tomatoes - (14 1/2 oz)
  • 1 can chicken broth - (13 3/4 oz)
  • 1/4 cup crumbled basil and tomato flavored
  • feta cheese

Preparation

Step 1

In a large skillet heat oil until hot. Add mushrooms and cook until tender and juices are released. Stir in orzo, tomatoes, chicken broth and 1/2 cup water. Simmer covered, stirring occasionally until orzo is tender and most liquid is absorbed. Stir in feta cheese and serve.

This recipe yields 4 servings.
