Sweet Asian Chili Pork

Ingredients
- 2-3 TB vegtable oil
- 2 TB flour
- 4 pork tenderloin filets, cut into bite size pieces
- dash of salt and pepper
- 1/4 c liquid egg substitute
- 1/2 c pineapple juice (from a can of pineapple chunks packed in juice)
- 4 tsp cornstarch
- 4 TB sweet Asian chili sauce
- 1 c canned pineapple chunks roughly chopped

Step 1
Place pork in a medium bowl and season with salt and pepper. Top with egg substitute and toss to coat.
Shake pork pieces with a slotted spoon to remove excess egg and coat with flour. Heat oil in a large frying pan and cook pork until golden brown.
Sauce: Meanwhile in a small microwave safe bowl, combine pineapple juice with cornstarch and stir to dissolve. Thoroughly mix in chili sauce. Microwave for 30 seconds, or until
sauce has thickened.
Transfer cooked pork to a large bowl. Add sauce and toss to coat, toss in chopped pineapples.
