ROASTED BEEF AND TURKEY WRAPS

Ingredients

  • 1 Cup bottled Russian Salad dressing
  • 3 scallions, chopped
  • 8 ea 7” or 8” flour tortillas
  • 4 cups baby spinach leaves, about 4 oz.
  • 8 oz. deli-sliced roast beef
  • 8 oz. deli-sliced turkey breast
  • 8 oz. deli-sliced sharp Cheddar cheese
  • 2 cups drained prepared coleslaw
  • Frilly toothpicks, pickle slices and stuffed Spanish olives, optional

Preparation

Step 1

Combine dressing and scallions. Lay tortillas on surface. Spread each with about 3 tbsp. dressing mixture, leaving ½ inch border.
Divide spinach among tortillas. Divide evenly, layer roast beef, turkey and cheddar over center of each tortilla. Top with coleslaw. Fold in 2 opposite ends; roll up tightly. Cut diagonally in half. If desired , garnish with toothpicks, pickles and olives.
