Greek Style Lentil Burgers

Ingredients

  • For Burgers:
  • 1/2 c. dried lentils
  • 2 T. evoo
  • 1 small onion, chopped (1 cup)
  • 1/2 red bell pepper, diced (1/2 cup)
  • 4 cloves garlic, minced (4 t.)
  • 1 (15 oz) can chickpeas, rinsed+drained
  • 1 c. loosely packed parsley leaves
  • 1/2 c. pitted kalamata olives
  • 2 eggs
  • 2 t. ground cumin
  • 1 t. ground coriander
  • 1 t. salt
  • 1/2 t. black pepper
  • 1 c. plain breadcrumbs
  • 3/4 c. grated carrots
  • 1/2 t. baking powder
  • For Tzatziki Sauce:
  • 2 c. plain lowfat yogurt
  • 1 medium cucumber, peeled, seeded, shredded + drained
  • 2 cloves garlic, minced
  • 1 t. lemon zest
  • 1 t. chopped fresh mint
  • 1 t. chopped fresh parsley

Preparation

Step 1

For Burgers:
Cook lentils according to package directions. Drain.

Heat oil in skillet over medium. Add onion and bell pepper, saute 7 mins. Stir in garlic.

Belnd chickpeas, parsley, olives, eggs, cumin, coriander, salt and pepper in food processor until smooth (2 mins). Stir chickpea mixture, breadcrumbs, and carrots into lentils. Shape into 8 patties. Layer patties between plastic wrap and freeze.

To Make Tzatziki Sauce:
Combine all ingredients in small bowl.

To Cook Burgers:
Preheat grill to high. Brush frozen patties with oil, and cook 6 minutes on each side. Serve burgers with sauce. (can serve in grilled pita with tomato and lettuce)
