Ingredients

  • 2-15 1/2 oz cans Blackeye peas, drained and rinsed
  • 3 Tomatoes, diced, 1/4"
  • 2 Mangoes, diced, 1/4"
  • 3 Green onions, diced, 1/4"
  • 1/2 cup Veggie Oil
  • 1/4 cup White Vinegar
  • 1 Juice of lime
  • 2 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste.
  • Pinch of Hot Pepper if wanted

Preparation

Step 1

1. Combine all the ingredients in a large bowl.
2. For best results, refrigerate for four hours prior to serving.

Serve with grilled fish, chicken, or meats.
