- 2 TABLESPOONS OLIVE OIL
- 1/2 POUND FRESH GREEN BEANS, TRIMMED AND CUT INTO BITE SIZED PIECES.
- 1 HEAD ROMAINE LETTUCE, TORN INTO BITE SIZED PIECES.
- 2 CELERY RIBS, SLICED
- 2 TABLESPOONS FINELY CHOPPED RED ONION
- 4 OZ CRUMBLED FETA CHEESE
- 8 KALAMATA OLIVES, PITTED
- 2 LARGE TOMATOES CUT INTO WEDGES
- GREEK DRESSING (RECIPE IN DEMY)

Step 1
TOSS TOGETHER PASTA AND OIL COVER AND CHILL 30 MIN TO AN HOUR.
COOK BEANS IN BOILING SALTED WATER TO COVER 4 MINUTES. DRAIN AND CHILL 30 MIN TO AN HOUR.
LAYER LETTUCE PASTA, BEANS AND CELERY ON A SERVING PLATTER AND SPRINKLE WITH RED ONION, CHEESE AND OLIVES.
ARRANGE TOMATOES WEDGES AROUND SALAD; DRIZZLE WITH 1/2 CUP GREEK DRESSING AND SERVE IMMEDIATELY.
SERVE WITH REMAINING DRESSING.
