Ingredients
- 1 T Bertolli Olive Oil
- 1 16oz Hot Links
- 1 Boneless, Skinless Chicken Breast
- 3 Stalks Celery, Sliced
- 1 Large Onion, Chopped
- 2 1/2 C Chicken Broth
- 1 1/2 C Long Grain Rice
- 1 14.5oz Can Diced Tomatoes
- 2 tsp McCormick Cajun Seasoning
- 1 tsp Thyme
- 1 C Diced Bell Pepper
- Salt
- Pepper

Preparation
Step 1
Heat olive oil in a large stockpot. Add sausage and chicken; cook over medium-high heat for 5 minutes, stirring frequently. Add celery and onion and cook 7-10 minutes more or until starting to brown. Add broth, rice, tomatoes, cajun seasoning and thyme and bring to boil. Reduce heat and simmer, covered, for 20 minutes. Remove from heat, stir in bell peppers. Replace cover, let stand for 5 minutes. Season to taste with salt & pepper.
