Ingredients
- 3/4 C granulated sugar
- 3 Tbs all-purpose flour
- dash of salt
- 4 eggs
- 2 C milk
- 1/2 tsp vanilla extract
- Nilla Wafers
- 5-6 medium size fully ripe bananas, sliced

Preparation
Step 1
Combine 1/2 C sugar, flour and salt in top of double-broiler. Mix in 1 whole egg and 3 egg yolks. Stir in milk. Cook, uncovered, over boiling water; stirring constantly until thickened. Remove from heat and add vanilla. Spread small amount on bottom of 1 1/2 quart casserole dish; cover with a layer of wafers, bananas and custard to make 3 layers of each, ending with custard. Beat remaining 3 egg whites stiff, but not dry; gradually add remaining 1/4 C sugar and beat until mixture forms stiff peaks. Pile on top of pudding covering entire surface. Bake in preheated hot oven 425* for 5 minutes or until delicately browned. Serve warm or chilled.
Makes 8 (about 3/4 C) servings.
