  • 2 C SUGAR
  • 2 EGGS
  • 1/2 C OIL
  • 1 t ALMOND EXTRACT
  • 2 C FLOUR
  • 2 t BAKING SODA
  • 1 t SALT
  • 1 t CINNAMON
  • 1/2 C CHOPPED PECANS
  • SAUCE;
  • 1/2 C BUTTER, CUBED
  • 1 C SUGAR
  • 2 T FLOUR
  • 1/8 t SALT
  • 1 C WATER
  • 2 t VANILLA
  • 1/2 t RUM EXTRACT

Step 1

IN A LARGE BOWL, COMBINE APPLES AND SUGAR. LET STAND 30 MINUTES.
IN A SMALL BOWL WHISK EGGS, OIL AND ALMOND EXTRACT. ADD TO APPLE MIXTURE AND TOSS TO COAT. COMBINE FLOUR, BAKING SODA, SALT AND CINNAMON, STIR INTO APPLE MIXTURE JUST UNTIL MOSITIONED. STIR IN PECANS.
TRANSFER TO A GREASED 11X7" BAKING DISH.BAKE AT 350* FOR 35-40 MINUTES.
FOR SAUCE, MELT BUTTER. STIR IN SUGAR FLOUR, AND SALT UNTIL SMOOTH. GRADUALLY ADD WATER. BRING TO BOIL, COOK AND STIR FOR 2 MINUTES. REMOVE FROM HEAT, STIR IN EXTRACTS. SERVE WITH WARM CAKE.

SERVES 9 WITH 2 CUPS SAUCE.
