Ingredients

  • 2 med potaotes, 1/4" dice
  • 1 sm onion, minced
  • 1 rib celery, chopped
  • 5 c clam juice, divided
  • 1 c water
  • 1 T fresh thyme
  • 1 T butter
  • 1 t worcestershire sauce-or to taste
  • 1/2 t salt-or to taste
  • fresh ground pepper to taste
  • 2 c minced clams
  • 4 c heavy cream

Preparation

Step 1

Combine in large pot-potatoes, onion, celery, 1 c clam juice, water, thyme, butter, worcestershire sauce, salt & pepper. Bring to boiling, reduce heat and cook 20 min until potatoes are soft. Stir in clams; cook 5 minutes. Add 4 c clam juice & heavy cream. Heat to simmer.
