Pork Satay

Ingredients
- 2 lb pork tenderloin, cut in 1" cubes
- 1/4 cup peanut butter
- 1 tsp coriander
- 1 large onion, finely diced
- 1 tsp salt
- 1 tbsp brown sugar
- 3 tbsp lemon juice
- 1 tbsp soy sauce
- 1 tsp Tabasco sauce
- 1/8 tsp ginger

Preparation
Step 1
Mix ingredients together for marinade and marinade pork cubes overnight in refrigerator. Freeze.
On cooking day:
Defrost pork satay, drain marinade (but save it!). Place meat on skewers in between pieces of onion (and any other vegetables you prefer). Grill on a preheated grill on high for five minutes. Flip skewers, baste with remaining marinade and grill on high for another 5 minutes. Reduce heat on barbecue
