Ingredients
- Dough
- 2 C flour
- 2 eggs
- 1/2 C brown sugar
- 1 tsp baking powder
- 1 C shortening
- 1 tsp vanilla
- Your favorite Jam or Jelly. (Apricot is my favorite)
- Topping
- 2 C flaked coconut
- 2 eggs, beaten
- 1 C sugar
- 3 tsp melted butter

Preparation
Step 1
Cream shortening and sugar. Add eggs and vanilla, then dry ingredients. Spread dough on 10x15 cookie sheet. Spread a generous layer of jam or jelly over dough. Mix topping ingredients and spread over top of jelly layer. Bake at 350 degrees for 15-20 minutes. Cool and cut into squares.
