Ingredients

  • 2 tsp olive oil
  • 2 leeks, , white and light green parts cut into 1/4 inch rounds (2 c.)
  • 1/4 tsp dried sage
  • 2 (14oz) cans chicken broth
  • 2 c. water
  • 1 (15 to 19oz) can rinsed cannellini beans
  • 2 c. cooked shredded chicken breast
  • Salt and pepper to taste

Preparation

Step 1

Heat oil in a large pot on med-high. Add leeks and cook, stirring often, until soft, about 3 min. Stir in sage and continue cooking 30 seconds or until aromatic. Stir in broth and water, and increase heat to high. Cover and bring to a boil. Add beans and chicken; cook 3 min. or until heated through. Add salt and pepper to taste.
