Meat Loaf with Peppers + Mushrooms

Ingredients

  • 2 pounds ground round
  • 1 tablesopoon butter
  • 1 cup finely chopped onion
  • 1 cup finely chopped bell pepper
  • 1 1/2 cup diced mushrooms
  • 1/2 cup finely chopped parsley
  • 1 cup fine breadrumbs
  • 1/3 teaspoon all spice
  • 1 egg slightly beaten

Preparation

Step 1

Preheat oven to 425 degrees.
Heat butter in saucepan, add onions, bell peppers, and mushrooms. Stir-cooking until vegetable mixture is wilted. Continue cooking until all liquid evaporates. let stand until cool. Add cooked vegetable mixture to meat; salt and pepper to taste. Add parsley, bread crumbs-all spice and egg. Blend well with hands. Pack mixture in loaf pan and smooth over top. 'Bake 1 hour.' Remove from pan and let stand 20 miinutes. Serve sliced with tomato sauce with horseradish on the side.
