Strawberry Muffins

Since I live in Strawberry City these are great muffins. You can also use blueberries, cherries, or chopped peaches.

Ingredients

  • 2 1/2 c flour
  • 1/2 c sugar
  • 2 teas baking powder
  • 1 teas baking soda
  • 1/2 teas salt
  • 1 1/2 c buttermilk
  • 1/3 c melted butter
  • 2 eggs, slightly beaten
  • 1 teas vanilla
  • 1 pint fresh strawberries, hulled and chopped
  • Additional sugar for topping

Step 1

Preheat oven to 400. Spray muffin cups with Pam or use cupcake liners. In a large bowl combine flour, sugar, baking powder, baking soda and salt. In another bowl whisk together the buttermilk, butter, eggs, and vanilla. Make a well in the middle of the dry ingredients and pour liquid mixture in and the strawberries. Using a large spoon, gently fold in ingredients just until moist do not over mix. Spoon the batter evenly into muffin cups. Sprinkle the top of each muffin with sugar. Bake 20 to 25 minutes.
