Chunky Minestrone with Beef

Ingredients
- 1 lb beef stew meat, trimmed
- 1 cup chopped onion
- 1/2 cup chopped carrot
- 2 (14.5 oz) cans no-salt added diced tomatoes with roasted garlic, undrained
- 2 (14 oz) cans fat free, less-sodium chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chopped cabbage
- 1 cup thinly sliced yellow squash
- 1 (15 1/2 oz) can chickpeas (garbanzo beans), rinsed and drained
- 2 cups cooked seashell pasta
- 6 TBSPs (1 1/2 oZ) grated Parmesan cheese

Step 1
1. Combine beef, chopped onion, chopped carrot, tomatoes, chicken broth, Italian seasoning, salt, and pepper in an electric slow cooker. Cover and cook on High for 1 hour.
2. Reduce heat to LOW, and cook an additional 5 hours or until the meat is tender.
3. Stir in chopped cabbage, sliced yellow squash, and chickpeas. Cook on High for 45 minutes or until vegetables are tender. Stir in the cooked pasta. Top each serving with grated Parmesan cheese.
