Turkey Divan Roll-Ups

Ingredients
- vegetable oil spray
- 8 slices 1/2 ounce each, deli turkey breast (zero carb)
- 2 cups cooked broccoli, coarsely chopped
- 2 ounces roasted red peppers, chopped
- 1 egg
- 1/2 cup shredded swiss cheese
- 1/4 cup grated parmesan cheese
- 1/8 teaspoon kosher salt
- 1/8 teaspoon black pepper
- wooden toothpicks, optional

Step 1
1. Preheat the oven to 350 and spray a sheet pan with vegetable oil.
2. Add all the ingredients, the turkey, to a bowl and mix well with a fork to make the filling.
3. Working over a sheet pan, fill each of the 8 slices of turkey breast with equal amounts of filling down the center, roll up and place open side down flat on the sheet pan, keeping all the rolls close together. (Wooden toothpicks may be used to hold the rolls closed if needed)
4. Place the sheet pan in the oven and bake for 5 to 7 minutes, until bubbly hot. Serve immediately (after cooking, the rolls may be refrigerated and then microwaved for on the go)
