Curried Catfish with Coriander Cream

Ingredients
- 1 tbsp. each: curry powder, oil
- 1/4 tsp. cinnamon
- pinch salt
- 1 garlic clove, minced
- 1 tsp. fresh ginger, minced
- 2 large catfish or tilapia fillets
- 1 tbsp. butter
- 1 onion, chopped
- 1/3 cup each: chopped fresh coriander, plain yogurt or sour cream

Step 1
In a small bowl, stir curry powder with oil, cinnamon, salt, garlic and ginger. Rub mixture all over fish. Melt half of butter in a large non-stick frying pan over medium heat. When hot, add onion. Stir often until soft and light golden, about 5 mins., then push to side of pan. Melt remaining butter in pan, then add fish. Cover and cook 4 mins. Using a wide spatula, turn fish over and continue cooking until a knife tip inserted into fish comes out warm, about 4 mins. Onion may darken. Remove fish to plates. Reduce heat to low. Add yogurt and coriander to onion. Stir 30 seconds.
