Ingredients

  • TOPPING:
  • 4 Freska ripe mangoes, peeled and sliced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 cup fresh orange juice
  • 1 cup unbleached flour
  • 1 tablespoon sugar
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons unsalted butter, at room temperature
  • 1 1/2 cups milk
  • 1/4 cup confectioners' sugar

Step 1

Preheat oven to 350 F.

In a 9-inch square baking dish, combine mangoes, ginger, cinnamon and orange juice. Toss together to coat.

To prepare the topping, combine flour, sugar, salt and baking powder in a small bowl; stir to blend. Add butter and mix until it has a sandy consistency. Stir in milk until smooth.

Dollop the topping onto the mango mixture, spreading to cover most of the surface.

Bake for 25 minutes, or until golden brown. Dust with confectioners' sugar and serve warm.

Makes 6 servings.
