Rustic Stuffed Artichokes

Ingredients
- 2 medium artichokes
- 1 Clove garlic, peeled and crushed
- 1 tsp. olive oil, divided
- Clove garlic, minced
- 1 c. fresh bread crumbs
- 1 heaping tbsp. minced fresh parsley
- Salt, freshly ground pepper

Preparation
Step 1
Place artichokes in pan filled with boiling water. Add crushed garlic and 1 tablespoon olive oil. Cook artichokes over medium. heat until very tender, about 45 minutes. Remove artichokes and drain well. Remove and discard fuzzy chokes from centers. Set aside.
Heat remaining 1 tablespoon oil in medium skillet. Add minced garlic and fresh bread crumbs .. Saute over medium-high heat 5 minutes, or until crumbs are golden. Add parsley, salt and pepper to taste. Spoon mixture into center and between leaves of prepared artichokes. If desired, place artichoke in small oven-proof dish and broil until crumbs are toasted, about 1 minute. Serve hot or tepid. Makes 2 servings.
