Italian Couscous

Ingredients
- 3 1/2 cups fregola sarda or other
- couscous
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons chopped flat-leaf parsley
- 1 tablespoon chopped cilantro
- Salt and freshly ground black pepper

Preparation
Step 1
Bring a large pot of heavily salted water to a boil over high heat. Add the fregala sarda and cook 8 to 10 minutes,
until tender, but still al dente. (For other couscous, follow the directions on the package.)
Drain the couscous and transfer to a
bowl. Set aside 2 cups for the salad.
Toss the remaining couscous with the olive oil, parsley and cilantro. Season.
