Holiday Mashed Potatoes

Mashed potatoes with lots of cheese and bacon - need I say more?
Call this a 'holiday' recipe because it has lots of heavy ingredients that you don't want everyday. Good to take to a dinner because it feeds a crowd. I have used 1/2 and 1/2 instead of heavy whipping cream, but Yukon Gold potatoes work the best. You can 1/2 the recipe also and it works just fine.
Ingredients
- 5 lb bag of Yukon Gold potatoes
- 2 bags of finely shredded sharp cheddar cheese (2 cup size bags)
- 2 sticks of butter
- 1 pint of heavy whipping cream
- 2 containers of real bacon pieces (not bits)

Preparation
Step 1
Wash, peel, cut and boil potatoes. Drain. Preheat oven to 325 degrees. While potatoes are still hot / warm, mix together with one bag (2 cups) of cheese, both sticks of butter, one pint of heavy whipping cream and one container of bacon pieces. After mixing together, pour into a large baking dish and top with the other bag (2 cups) of cheese and the remaining container of bacon pieces. Bake in preheated oven for approximately 35 minutes or until bubbly. Enjoy!
