Ingredients

    medium baking potatoes, peeled and diced

  • 1

    cup cubed processed cheese

  • 3/4

    cup whole milk

  • 1/4

    cup diced onion

  • 3

    Tbsp butter, melted

  • 1

    large egg, lightly beaten

  • 1

    tsp salt

  • 1/2

    tsp ground black pepper

Directions

In a large Dutch oven, combine potatoes and water to cover. Bring to boil over medium-high heat. Reduce heat, and simmer for 8 to 10 minutes or until potatoes are tender. Drain well. Preheat oven to 350. Spray a 2-quart baking dish with cooking spray. Place potatoes in a large bowl, add cheese, milk, onion, butter, egg, salt and pepper. Beat at medium speed with an electric mixer until combined. Spoon mixture into prepared baking dish. Cover and bake 20 minute or until heated through. Serve immediately.
